
This dish was introduced to me by one of my best friends, and now it is one of my absolute favorites.
3 15 oz cans white kidney beans
6 c. chicken broth
2 med. onions chopped
2 TBS. olive oil
1 Rotisserie Chicken, shredded
2 4 oz cans diced green chilies
2 cloves garlic, minced
2 tsp, cumin
1 1/2 tsp. oregano
1/4 tsp red pepper flakes
1 tsp salt
1/2 tsp pepper
Mix all ingredients together, simmer
I usually simmer until the onions are soft.
top with sour cream, green onions, or cheese.
